Geology Special

I love everything about pie. I love making it (cutting up the fruit, shaking on spices, rubbing the cold butter into the flour, smelling it in the oven with rising anticipation), I love eating it (the excitement of the first triangle-shaped bite from the front of the piece, making sure the last bite has equal fruit and crust representation) – I just love it. And my pies usually taste pretty good, although I do acknowledge that I’ve never met a pie I didn’t like and am not perhaps the most dispassionate judge.

However, all this affection just does not equip me with any ability to roll out a coherent crust. This one looks like the Rift Valley!
