Even if you scrape off all the green fuzz on your piece of rather venerable mozzarella, it will still make your pizza taste/smell faintly of old socks.
(Somehow, this will not be completely disgusting, and you will still consume it. I like to blame my almost complete lack of squeamishness on Peace Corps, but deep down I know I've never really cared about a little bruising/mold/dirt. [Except when it comes to bananas because overripe bananas are kind of the devil, although undeniably excellent for baking, if you can bring yourself to deal with the blackened putrescence factor - a shot of Makers for both yourself and the banana bread helps.])
* Bacteria-friendly? Parsimonious? Deeply lazy? Whatever.
