- Open kimchi you made a couple weeks ago (using kale instead of ramp greens)
- Shred some cheese (used fresh mozzarella, was a little too bland, think a nice sharp cheddar would work better in the future)
- Put tortilla in frying pan, turn on heat, sprinkle on cheese and kimchi
- When cheese is melty, flip tortilla closed
- Take off heat, cut into triangles, eat with some preserved kumquats
- For dessert, some plums/peaches/blueberries you made into a compote a week or so ago (b/c all were on the verge of going bad)
Side note: Blending a cantaloupe w/ some ginger and basil makes for a mighty fine aperitif.
