Last night I made:
- Dal (added kale that had been sauteed w/ some fennel seeds and made brown rice to accompany)
- Roasted acorn squash w/ chili-lime vinaigrette (did not mash garlic, used 1 jalapeno for chili, neglected to include the cilantro; also, got a friend to peel the cooked squash out of the skin and break it into chunks, then poured dressing over to let it marinate a bit)
- Mushroom-zucchini pie (use this biscuit dough for crust, making half of the flour whole-wheat and skipping the dill, onion, and cheese; use this mushroom recipe for filling except use a mixed handful of basil and rosemary instead of thyme, and add it at the end; also, when mushrooms have stopped exuding liquid, add 2 c grated zucchini, and when zucchini have stopped exuding liquid, add roughly a cup of chopped-up hard orange cheese of unknown origin dug up from the back of the fridge; bake at 400 for 30 min or so)
- Plum cake (again, what can I say)
This burst of domesticity brought you by a) having been in the shameful position on Monday morning of having NOTHING TO TAKE FOR MY LUNCH b) wanting to use up stuff in my fridge. I heartily endorse all of these recipes.
