Revelation!

I always used to think of baking as something calling for precision, exact and undeviating allegiance to a recipe, etc. - but lately I have been discovering the joy of flinging in a handful of sliced almonds, random fruit, or half a cup of ground coconut, tinkering with the sugar, gleefully ignoring the proper amount of flour, using oil instead of waiting to melt butter - and at least with fairly stolid items like banana bread and simple cakes, improvisation works!

Although if you are lazy and mix in the baking powder with the wet ingredients, because you don't want to bother getting another bowl dirty to mix it with the flour, then it will do whatever magical chemical reaction it does in the mixing bowl, not in the oven - this won't affect the taste but will diminish the loftiness of the finished item.
