Standby

Does everyone have things they cook regularly, b/c they're satisfying and easy?  Mine is a very flexible black beans/sweet potato*/onion dish that can have just those three ingredients or be much more complicated.  I make it every 3 weeks or so.  Basically:

- cube 2 medium sweet potatoes, boil til soft, drain
- mince 3 cloves garlic, 1 onion (red, yellow, whatever), ginger, chilies
- heat whole cumin and red pepper flakes in oil
- add all minced stuff, cook til soft
- add 2 cans black beans and sweet potatoes, cook til warm through, add cilantro if feeling very fancy

You can eat it plain or dress it with cheese, avocado, salsa, hot sauce or I suppose sour cream.  Corn tortillas toasted in a hot skillet are a nice side.  If you are among the elect that can make rice without burning the pot or dying of boredom, I guess you could eat it with rice.  It keeps forever, is easily transportable, blah blah healthy fibre whatnot (depending on how luxurious you get w/ the toppings), and makes a superlative gorilla breakfast when topped with a lightly fried egg, the yolk still completely runny.

* Or yam.  Basically, orange starchy root.
