- 2 c cooked kasha (aka buckwheat groats)
- 2 eggs, whisked
- a tb or so each sesame oil and soy sauce
- 1 carton mushrooms, sliced & sauteed
- 5 cloves garlic, minced, added to mushrooms for last minute of cooking
- 1 bunch green onions/scallions, sliced
- 4 small carrots, grated
- 1/2 tsp chili powder
Mix all of above, heat some olive oil in frying pan, spoon patties into frying pan (first making sure oil is HOT ENOUGH - I never ever do), let get crisp on bottom side, flip very very carefully, let get crisp on other side. Eat w/ soy sauce and sriracha and cut-up sweet potatoes roasted w/ sesame oil, sambal oelek and cumin and drizzled w/ hoisin sauce.
The fritters are a little delicate/crumbly (another egg? more oil?) but the musty buckwheat taste is MUCH better in this context.
